The Gap Between Machines Is the Problem

Most operators look at their kitchen and see a labour problem. I looked again and saw a structural one.
Here is what I mean. Walk into a modern professional kitchen. You will see smart equipment everywhere. A combi oven that can be programmed to the degree. A blast chiller that hits target temperature in minutes. A dishwasher that cycles in ninety seconds. Each machine, on its own, is impressive.
Now watch what happens between them.
A person takes a container out of the blast chiller and carries it to the prep station. Another person portions it. A third loads the combi oven. A fourth monitors the timing because the machines do not talk to each other. A fifth takes the result out and checks — by eye — whether the quality matches what the chef specified this morning.
That is not a kitchen. That is a relay race between machines, with humans as the batons.
And here is what most people miss: this does not just happen between the big areas of the kitchen. It happens within every single one of them. Inside the baking process alone — flour mixing, dough resting, stretching, proofing, oven loading, cooling, storing — each step happens at a different machine, a different fridge, a different station. Between every one of them stands a person whose only job is to carry, wait, and transfer.
The machines are smart. The spaces between them are not. And those spaces — the carrying, the checking, the coordinating — are where 70% of kitchen labour actually happens. Not in cooking. In logistics.
This is why hiring more people does not solve the problem. You are not filling cooking positions. You are filling gap-filling positions. Positions that exist only because the machines in the kitchen were never designed to work as a system.
Escoffier solved exactly this problem in 1890, but at the human level. Before the Brigade de Cuisine, every cook worked independently. The food that came out of the kitchen depended entirely on who was cooking that day. Escoffier did not find better cooks. He created a system that made ordinary cooks produce extraordinary results by giving them structure, roles, and coordination.
Today the equivalent problem sits between machines. The machines are capable individually but uncoordinated collectively. The answer is not a better machine. The answer is a complete solution for each area of the kitchen — one that covers the entire internal process from raw material to finished result, so the chef and the team can focus on what matters: the creative assembly, the plating, the guest.
