What Escoffier Would See If He Walked In Today

If Escoffier walked into a professional kitchen today, this is what he would see.
His name is still everywhere. The brigade chart hangs on the wall. Chef de Cuisine at the top. Sous Chef below. Chefs de Partie running their stations. Commis and apprentices forming the base — the learning layer, the hands that kept the system moving.
Except that layer is gone.
In 1890, when Escoffier formalised the Brigade de Cuisine at the Savoy Hotel in London, he was not inventing a hierarchy. He was inventing a process. Every person had a defined role. Every station had a clear output. The kitchen functioned like an orchestra — the Chef de Cuisine conducted, but every section played its part.
The genius of the brigade was not that it employed many people. The genius was that it made each person more effective. A Commis at the sauce station learned from the Chef Saucier. An apprentice at the garde manger absorbed technique through proximity. The system multiplied skill. It turned a kitchen full of individuals into a single coordinated instrument.
Now walk into the same kitchen in 2026.
The chart is still there. But the Commis layer — the 60% of the brigade that formed its foundation — has disappeared. Not because operators chose to remove it. Because the people who used to fill those roles found better options elsewhere. After the pandemic, they discovered there were more interesting jobs, better paid, with free weekends and evenings. They left. And the apprenticeship pipeline that was supposed to replace them has collapsed forty-five percent in a decade.
What remains is a Chef de Cuisine trying to conduct an orchestra with half the musicians missing. The Sous Chef covers three stations instead of supervising. The Chefs de Partie do their own prep because there is no one below them to do it. And the machines — each brilliant in isolation — sit between human beings who spend their day carrying things from one to the next.
Escoffier would not recognise this as his system. He would recognise it as the problem he solved in 1890. A kitchen full of capable people doing work that wastes their capability. A structure that demands coordination but provides no mechanism for it.
He would also recognise the answer. Not more people — a better system. Not harder work — smarter process. Not the preservation of what he built, but the invention of what comes next.
